Our Story

 

WildGins is a story of exploration, nature, and the pursuit of a distinctly Texas gin. It is a story rooted in the rugged terroir of West Texas.

When University of Texas biology professor Molly Cummings discovered that Texas is home to eight distinct species of juniper—far more than most traditional gin-producing regions—she saw an opportunity to rethink what gin could be. Rather than relying solely on common juniper, she set out to identify which native Texas species could produce exceptional flavor in the glass.

That search led her to the Davis Mountains and high plains of West Texas, where Alligator Juniper and Redberry Juniper grow wild.

WildGins is devoted to showcasing these uncommon, wild-foraged junipers in thoughtfully crafted gins. While the vast majority of gins worldwide rely exclusively on common juniper, WildGins pairs the familiar with the extraordinary, bringing native Texas species to the forefront.

WildBark West Texas Dry Gin is crafted with hand-foraged Alligator Juniper harvested above 5,000 feet. Bold, structured, and juniper-forward, it’s a Texas Wild Twist of a classic London Dry.

WildJune Western Style Gin is made with rare Redberry Juniper, found in Texas and nowhere else in the U.S. and hand-foraged from the high plains above 3,000 feet. Blended with ten botanicals, WildJune is brighter, more expressive, and built for modern cocktails.

At WildGins, our trees matter. Each small batch of WildBark or WildJune is made using berries from a single, individually named tree. Each tree name appears on the label, honoring the land and the source, and defining our single-origin approach to gin.

We also believe in protecting the wild places that make our gins possible. Through our Give a Wild Buck program, $1 from every bottle sold between November and February is donated to The Nature Conservancy’s West Texas chapter.

WildGins is gin shaped by science, place, and respect for the land. It is made for those who believe the wild belongs in the glass.
