The world of gin keeps getting broader, as distilleries push the boundaries to create unique spirits with a wide variety of distillates and botanical infusions. Molly Cummings, biology professor at the University of Texas and founder of WildGins, brings her biological expertise to crafting these unique gins, made with hand-foraged juniper berries from the West Texas Mountains. But WildGins go even further – each distillation batch uses berries from a single tree out of hundreds of juniper oforaged, and put the batch-specific tree name on every bottle, laying claim to the title of World’s First Single-Origin Gins.
There are two distinct expressions of WildGins, both with a base spirit of 80% rye, 20% malted barley. WildJune (SRP $39.99) is a Western-style gin that blends the rare West Texas red berry juniper with 10 other botanicals. WildBark (SRP $39.99) is a Texas take on the traditional London Dry, a bolder version of the British classic flavored with alligator juniper. Both are made with a wide variety of gin botanicals, many of which are organic, alongside the wild foraged junipers.
